Ingredients
- 1 lime
- 1 red onion
- 200g cheddar
- 120g sour cream
- 8 flour tortillases
- 2 cans black beans
- 2 tsp ground cumin
- 1 tsp smoked paprika
Method
- 01Mash the beans with cumin, smoked paprika and a squeeze of lime.
- 02Spread over tortillas, add cheddar and red onion, fold in half.
- 03Toast in a dry pan for 3 minutes per side until crisp and melted.
- 04Cut into wedges and serve with sour cream and lime.
